Turkish Spiced Salad

Posted by Kirsty Forsberg

A refreshing and punchy salad, great with grilled meats. Recipe adapted from ‘The Clothes Make the Girl’ here
Serves 4

  • 1 cucumber
  • 1 red pepper
  • 1 yellow pepper
  • 1/2 a red onion
  • 2 firm kiwi fruit - peeled or skin on, up to you
  • 3 vine tomatoes
  • 1 bunch radishes
  • 2 sticks celery
  • 1 handful of black olives - sliced
  • 1 handful parsley - chopped
  • The juice of two lemons
  • 1/3 cup of extra virgin olive oil
  • 1 fat clove of garlic - crushed
  • 1/2 tsp each of cumin, oregano, paprika, and sumac
  • Sea salt and black pepper

Chop all salad veg/fruit into 1/2” dice, so they are all approximately the same size. Toss into a serving bowl.

Slice the olives and mix into salad.

Now for the dressing…. Chop parsley and add to a small bowl, along with the spices and lemon juice. Whisk together and then whisk in all the olive oil.

Pour the dressing over your salad, and season to taste with the salt and pepper.

Be inventive and mix and match the salad ingredients to whatever you have to hand.
