Turkey Sausage Patties

Perfect for a weekend breakfast. Adapted from Gwyneth Paltrow’s recipe here
Serves 4.


  • 1/2lb /225g free range turkey mince
  • 1 tsp fennel seeds - crushed slightly
  • 1 tsp dried sage
  • 1 tsp fresh rosemary - finely chopped
  • 1 pinch chilli flakes
  • 1 pinch cayenne pepper (or paprika if you want to keep the heat down)
  • 1 tsp sea salt
  • Freshly ground black pepper
  • Olive oil for frying


    This is really simple. Break up the mince and sprinkle on all the spices, herbs and seasonings. Mix together well.

    Take spoonfuls of the mixture and shape into thin patties or oval sausage shapes.

    Fry in olive oil for a few minutes on each side or until cooked through and golden.

    Serve these with some poached eggs and grilled tomato on the side.

    You could also try the same recipe with free range pork mince instead of the turkey.
