Make your own mayo - handy for dipping your leftovers in!

  • 2 Egg yolks
  • 1/2 - 3/4 cups olive oil (the more oil you add the thinner the mayo)
  • 1/4 tsp mustard
  • 2 tsp. balsamic vinegar


Mix the oil and vinegar together in a jug.

Beat the eggyolks in a mixer on fast speed, then add the oil and vinegar mix slowly on a slower speed - otherwise the mixture separates.

Add mustard and salt to taste.

Will keep for a couple of days in the fridge
