Nut Butter Hotcakes

Just 3 main ingredients go into making these delicious little beauties, and they’ll fill you up till lunch.
Serves 2 with leftovers.

  • 3-4 free range eggs - beaten
  • 2 tbls almond butter (or a nut/seed butter of your choice)
  • 1 large banana mashed (or instead try 1/2 cup cooked mashed squash/ sweet potato /avocado)
  • 1 tsp cinnamon - optional
  • Pinch sea salt
  • Coconut oil for frying
  • Fresh berries to serve with, and maple syrup/raw honey to drizzle if desired



    Mash the nut butter into the banana or veg mash (or a mixture of the two). Occasionally I mash in an avocado with the banana, weird maybe, but it’s extra nutrition!

    Beat in the eggs until you have a thick batter.

    Finally mix in the salt and the cinnamon.

    Heat 1/2 teaspoonfuls of coconut oil into a preheated frying pan and drop 1/4 cup spoonfuls into the pan. Wait for little bubbles to appear and top to set slightly, then turn over. These are cooked in a flash.

    Serve with fresh berries on the side, or maybe some bacon and a for a real treat, a drizzle of maple syrup or raw honey.
