No Grain Granola

Hooray! A Paleo breakfast ‘cereal’ stand in. For all of you who miss their morning bowl of something slurpy & crunchy.
This seems like a lot of ingredients but if you just have it once a week, it’ll stretch further and justify the shopping budget…

Ingredients

  • 5 tbls of unsalted butter or coconut oil - melted
  • 1 cup of flaked almonds
  • 1 cup of whole almonds, chopped roughly
  • 1 cup whole hazelnuts, chopped roughly
  • 1 cup pecans, chopped roughly
  • 1 cup walnuts, chopped roughly
  • 3 cups of dessicated coconut - unsweetened
  • 1 cup of flaked coconut
  • 2-3 tsps cinnamon
  • 1/4 - 1/2 tsp of fine sea salt
  • Almond milk/coconut milk and fresh berries to serve with

    Method

     

    Oven preheated to 175C. Roughly chop your whole nuts, make sure you have a mix of larger and smaller pieces - not just dust!

    Mix with your flaked almonds, and both dried coconuts.

    Sprinkle in in the salt and the cinnamon. Then pour on the melted fat. Use your (clean) hands to work everything together well until coated.

    Transfer to 2 lined baking trays (I use parchment) and bake for 15-20 mins, or until golden and crunchy. It’s best to keep checking and stirring occasionally throughout the roasting process.

    Cool the mix thoroughly and then transfer to Kilner jars or tuppaware.

    Serve ice cold nut or coconut milk and some berries on top.
