Coconut Baked Prawns

Great flavour and texture. A paleo version of scampi!


  • 1 225g bag of raw defrosted frozen prawns
  • 1-2 cloves of crushed garlic
  • A good pinch of chili flakes
  • 1 cup of unsweetened dessicated coconut
  • 1 tbls coconut oil - melted
  • Salt and pepper


If you usually devein prawns, then make a slit down the back of each prawn and remove the long black vein. If you don’t usually bother then, skip this step.

Toss the prawns in the coconut oil, garlic and chilli.

Then stir in the coconut, make sure prawns are well covered. Place them on a baking sheet, and sprinkle around extra coconut from the bowl.

Place on baking sheet and bake at 180c for about 20-25 minutes or until prawns are pink and coconut is golden.

Serve with a squeeze of lime or lemon, alongside some roasted veg and a green salad
