Chicken Curry with Courgette Patties

This is from Lemonie Jones.
I grate a courgette and then put it in a sieve and sprinkle with salt and leave for 20 mins and then wring all the water out. Put in a bowl with an egg and then add whatever spices you fancy. I added a sprinkle of cinnamon and a tsp of powdered horseradish. Curry was the following which despite now having any traditional curry spices is really nice. This makes 1 big portion.

Ingredients

  • chicken breast
  • 30g onion
  • 2 cloves garlic
  • 10g ginger - grated
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1 tsp horseradish
  • 80g coconut milk
  • 30g coconut cream
  • 1 tbsp curry leaves - scrunched in hands
  • 2 tbsp oil

Method

Medium heat.

Fry the onions and ginger in the oil.

Add the garlic and horseradish and cook.

Add the chicken and spices and fry for 5 mins.

Add the rest of the ingredients and simmer till blended and thickened.
