California Mystery Scramble

A speedy, healthy full spectrum breakfast, inspired by a trip to the US and the amazing choice of breakfasts on offer.
Just use whatever fresh and leftover veggies/protein items you have in your fridge. It’s really that simple.
Serves 2


Ingredients

  • Coconut oil or olive oil for frying
  • 1 red pepper - chopped into small cubes
  • 1 small onion - finely chopped
  • 1 clove garlic - finely chopped
  • 1/2 green chilli (seeds out) - finely chopped
  • 1 small sweet potato - chopped into small cubes
  • 2 quality (gluten free) sausages
  • 5 free range eggs - beaten
  • 1 large handful of spinach
  • Fresh parsley - optional
  • Pinch of sea salt, black pepper
  • 1 large ripe avocado - sliced lengthways

    Method

    Add some oil to you frying pan and add chopped sausage, fry for a few minutes, stirring all the time.

    Now add the onion, pepper, chilli and garlic. Cook these for a few minutes in the yummy sausage flavoured oil and then add the sweet potato. Stir fry everything until the sweet potato is almost cooked through.

    Pour in the eggs and the spinach leaves and stir well. When eggs are cooked and spinach has wilted, season the scramble with salt and pepper.

    Spoon into bowls and serve with some fresh avocado on the side and a sprinkle of parsley.

    Please take these ingredients as just a guide, and incorporate whatever you fancy into your eggs ... Other veg ideas are shiitake mushrooms, roasted squash, broccoli, cherry toms, cauliflower, courgettes and fennel. For protein options, try tinned tuna, cooked chicken, beef mince, leftover shredded roasted meats and of course bacon all work really well. Just experiment!
